[more info] Summary from MetaCyc: Storage proteins of pulses are protected by the presence of enzymes that convert O-diphenols to O-quinones. This helps prolong the storage of the legumes seeds for longer periods. Many legumes that lack these oxidation enzymes result in having a very small shelf storage time and in economic loss . This pathway shows the biosynthesis of an caffiec-malic ester that accumulates in red clover, up to several micrograms of fresh weight. The enzymes underlying this pathway are targets for engineering into other legumes that lack them. is an endogenous substrate for the polyphenol oxidase of red clover, and the seasonal variation of phaselic acid has been studied and evaluated for correlation of enzyme and substrate levels . The combination of PPO and diphenols protect red clover storage protein from proteolysis during ensiling.
